At Riddle and Finns we only work with trusted and knowledgeable suppliers, this way we can ensure the highest quality on our menus. Our main supplier of fresh fish are local Shoreham based BNFS, who provide us with day caught local fish and shellfish from their fleet of inshore fishing boats. Using BNFS guarantees provenance with all of their fish and they are the only UK fish market that own their own fish quotas making them a truly reliable source of the finest quality fish at Riddle and Finns.
We feature a range of smoked fish dishes on our menu which comes straight from the family run Springs Smoked Salmon which was established in the 1960's. The vast majority of our produce is from the local Sussex area, and we trust our suppliers to source responsibly and seasonally further afield.
Oysters are at the heart of our passion for seafood, we work closely with Rossmore Oysters who grow and sell some of the finest oysters from around Scotland, England and Jersey. Working with Rossmore ensures the oysters on our menu are always in season and of the finest quality.
Enjoy our oysters shucked to order in their rich liquor, with a slice of fresh lemon and Tabasco or with one of our hot or cold sauces. We also have a wide selection of caviar on offer - served with water biscuits or blinis or as the perfect finish to your oyster.
Our classically trained head chef David Roy has created a range of modern classics that have been internationally influenced, these dishes all feature locally sourced ingredients and a variety of fresh herbs and spices. With the luxury of having so much local crustacea on our doorstep we are able to offer a wealth of local and fresh fruits de mers, such as winkles and whelks, cockles and crabs from the local Sussex shores.
We have an extensive wine and Champagne list which features both boutique and household names from Dom Perignon to Court Garden Farm wine - grown and bottled in Sussex. To go with our seasonally changing food menu, our wine list is constantly developing to compliment our food and your dining experience.
